Now, this recipe was given to my mother by my aunt recently. It can be easily altered to be diabetic friendly, and would also be a great treat in a kid's lunch box, or an after school snack. I don't have a picture for it currently, but it is worth trying. Think rice krispie treats, but with peanut butter instead of marshmallow.
What You Need
-1/2 Cup Sugar (substitute with Splenda)-1/2 Cup Honey (substitute with sugar free honey)
-1/2 Cup Peanut Butter
-3 Cups plain Cheerios
What You Do
-Add Sugar and Honey to a small saucepan. Heat over medium heat until boiling, stirring often.-Add the Peanut butter.
-Measure out cheerios into a large mixing bowl. Once peanut butter is melted and the mixture is smooth, pour the mixture over the cheerios and stir until covered. Press flat into an 8x8 pan.
-Enjoy warm or refrigerate for about 30 minutes to allow them to set hard.
-Cut into 2x2 inch bars
